First-in, first-out — use the old stock before the new.
Definitions
The golden rule of the walk-in: when fresh product comes in, it goes behind the older stock, not in front of it. Break FIFO and you're throwing money in the bin and inviting a health inspector to ruin your week.
Accounting sense: an inventory valuation method where the oldest stock is counted as sold first. Same logic, applied to the books instead of the walk-in.
