Deep-fried, salted pig skin. The defining Black Country pub snack — properly hard, properly salty, with bits of hair that prove they're the real deal. Born in the West Midlands in the 1800s when families slaughtered their own pigs and rendered the skin into something that'd keep on the shelf and sell over the bar.
